Couple’s to-be and bridal party guests are invited to an afternoon at The Ardilaun when Galway’s Award winning Michelin Star Chef Ultan Cooke who has recently joined The Ardilaun team as Executive Head Chef, will give an exciting food demo titled ‘It’s All about Food’ on Sunday 12th March 2.00 to 4.00pm at the hotel. Enjoy an entertaining afternoon with TV and showbiz personality and MC Noel Cunningham in the romantic and nostalgic setting with its open fireplaces, antique furnishings and timeless crystal chandeliers. Award Winning Head Chef Ultan Cooke has joined our team 

Food of course, is central to any celebration and The Ardilaun has recently welcomed award winning Michelin Star Chef Ultan Cooke as Executive Head Chef.  Ultan who is a native of Galway, spent ten years in the UK becoming a master of his craft, working with John Torode in his restaurants ‘Smiths of Smithfield’ and ‘The Luxe’.  Like many before him, having a family of his own spurred a return home and just over four years ago he arrived back on the west coast.  Bringing a wealth of experience with him he worked at Aniar in Galway and most recently in Ballynahinch Castle in Connemara.

Grounded in an ethos of ‘using the best of what we have locally’, the focus of Ultan’s work is to source seasonal, local produce and create dishes accordingly.  Daily inspiration comes from what arrives in the kitchen and dishes are truly reflective of the best of the west of Ireland. The dish that Ultan has created for us here is indicative of his commitment to local seasonality.

‘In the west of Ireland we have wonderful dedicated artisan food producers and where possible we choose to source locally produced ingredients – meat, fish, poultry, vegetables, herbs and cheeses – this makes dining in The Ardilaun a truly west of Ireland experience, based as we are, here on The Wild Atlantic Way,’ commented Ultan.
